With an emphaisis on utilising fresh, locally sourced produce, Mawddach Restaurant offers a modern, luxurious menu which retains simplicity and intensity of flavour, complementing the finest seasonal ingredients available.
Ifan grew up on the family farm in Llanelltyd, North Wales. His passion for cooking evolved through working in local restaurants around Dolgellau. He moved to Cardiff in 1997 to continue to develop his skills as a chef, helping Davenditos Restaurant to achieve AA best restaurant in Wales 2001-02, winning Welsh Young Chef of the year in 2003 and presenting a weekly cooking slot on Welsh television (S4 / C).
After ten years developing his catering skills in Cardiff Ifan decided to open his own restaurant on the family farm in Llanelltyd. The work on transforming a farm outhouse into Mawddach Restaurant was completed in December 2007.
Ifan now works as head chef at Mawddach Restaurant, with his partner Amelia running front of house as Restaurant Manager.
Ifan's menu emphasises the use of fresh, locally sourced, seasonal produce including Welsh lamb reared by his brother Will on the family farm. Produce including Beef, Pork and Game are sourced through a network of local farmers.
