It would depends on the product, however you should always try and be as descriptive as possible and use cut aways showing the viewer what you saying. For example - if you want to train someone to build a box you should show how it is built. Again it depends on the product or service

This is obviously more of a choice question but would you say trining videos as with the box build should show the box and just a voice of the things being done or would you recommend having the person with shots of them talk?

It dependes on your budget and on the time you have to spare, however I personally prefer to give the viewer a more personal experience by having someone taking directly to the camera and swaping between shots.
